Panama City Food Stopover: Fit Maito into Two Nights

Two nights in Panama City give you something a short airport layover does not: a full day to build around a memorable meal. Use Maito as the principal reservation, then let Casco Viejo and a simpler lunch provide contrast. A destination restaurant is better enjoyed when your flight is not the next item on the schedule.
Why Maito belongs in the plan
Mario Castrellón’s restaurant presents Panama’s multicultural culinary identity through the idea of Chombasia. Its official description connects tropical ingredients with the country’s different cultural influences. That makes it a relevant introduction to Panama rather than merely an expensive dinner during a connection.

The image accompanying this guide shows Casco Viejo, not Maito. Enjoy the historic district without assuming your dinner is around the corner. Confirm the restaurant’s current address and calculate the transfer from your actual hotel. Leave a weather buffer rather than depending on a long walk just before the reservation.
Choose your menu deliberately
Ask which formats are available on the date, what drinks cost and whether everyone must choose the same menu. Share dietary restrictions before paying. A booking confirmation should identify the restaurant, date, guest count and cancellation deadline; a message asking for a table is not itself a confirmed reservation.
Make the stopover feel like a visit
Leave one unscheduled stretch for coffee, a neighborhood walk or simply a slower lunch. You do not need another major reservation to make the city worthwhile.
