Corn first
Xokol — “maíz pinto” in Nahuatl — is chefs Xrysw Ruelas and Óscar Segundo’s tribute to native corn and the people who grow it. In 2026 it received a Michelin star and a Michelin Green Star, the Guide’s recognition for sustainable practices.
Mazahua roots on the plate
The kitchen works with criollo corn from Santa María Citendejé in the State of Mexico and honors the chefs’ Mazahua heritage, combining stone and clay tools with modern equipment. Dishes have included maíz con leche, a Mazahua mole and ceremonial tortillas, with quelites, squash blossoms and chilacayotas in season.
Relaxed and accessible
Unlike many starred restaurants, Xokol serves an à la carte menu at accessible prices — local press has reported dishes at roughly MXN 150–190. Across the street, its sister project Nejayote Molino focuses on masa.
Pair it with Alcalde
Guadalajara’s other new star, Alcalde, offers a polished tasting menu — a perfect contrast. See the full list of Michelin-starred restaurants in Mexico.
Visiting
Xokol is at Herrera y Cairo 1375 in Santa Teresita, a neighborhood a short ride from the historic center. Go with an appetite for corn and ask what is in season.
