Jalisco joins the Michelin map
When the Michelin Guide Mexico expanded to Jalisco in 2026, Alcalde was one of the first two Guadalajara restaurants to earn a star. Chef Francisco “Paco” Ruano opened it in 2013, and it has long featured on The World’s 50 Best extended list, ranking 51st in 2025.
The menu
Alcalde is known for a tasting menu built around seasonal Mexican and Jalisco produce, with an à la carte option for a shorter evening. Expect the flavors of the region — corn, chiles, citrus and the Pacific coast — treated with precision.
A second star in town
