Dinner under the oak
Animalón began in 2017 as a seasonal project by Baja chef Javier Plascencia at Finca Altonzano, with a dozen or so tables set beneath an oak tree that is around two centuries old. It received a Michelin star in the Guide’s first Mexico edition and holds one star in 2026. The Michelin inspectors open their description by asking how many restaurants truly deliver on the promise of being transporting — and conclude that this one does.
Baja on a tasting menu
Expect contemporary Mexican cooking with regional influences, built around Baja’s seafood and produce. Dishes Michelin has highlighted include beer-braised barbacoa wrapped in banana leaf and cooked tableside, and a tomato broth with chocolate clams poured at the table. Menus change with the season.
Season, weather and timing
The terrace under the oak is used in the warmer months; in colder months, service moves to a pop-up space. Afternoons in the valley can be hot and evenings cool, so bring a layer. Michelin lists service Wednesday to Sunday, with longer afternoons on weekends — confirm before you plan.
Wine country around the meal
Valle de Guadalupe is Mexico’s best-known wine region. Plan tastings earlier in the day, arrange a driver rather than driving yourself, and leave space before dinner. The valley also has other starred tables, including Conchas de Piedra and Damiana, if you are staying several nights.
The photograph on this page shows the valley’s vineyards, not the restaurant.
