Puerto Vallarta’s first Bib Gourmand
When the Michelin Guide Mexico 2026 reached Jalisco’s coast, ICÚ was one of the first Puerto Vallarta restaurants to be recognized, with a Bib Gourmand: the Guide’s distinction for good cooking at good value. Chef and owner Mauricio Leal trained locally, worked at Café des Artistes, studied at Ferrandi in Paris and cooked in banquets at Four Seasons Punta Mita before opening ICÚ in 2017.
Corn at the center
The name refers to corn in the Wixárika language, and corn runs through the menu. Leal describes his approach simply: he cooks what he likes to eat, following the seasons and what local producers bring in. Dishes highlighted by the Guide include a blue-corn quesadilla with octopus and pork belly, the fish of the day and a cajeta flan.
Three ways to dine
Choose the seasonal à la carte menu for a relaxed dinner, a five-course corn-focused experience, or the seven-course tasting menu if you want the kitchen to lead. Menus change with the season, so treat any dish named here as a guide rather than a promise.
Make it a Zona Romántica evening
ICÚ sits on Venustiano Carranza, less than a block from Parque Lázaro Cárdenas. Walk the Malecón at sunset, then come up into the cobbled streets for dinner. Our Puerto Vallarta guide covers where to stay and how to plan the rest of the trip.

Reserve ahead
ICÚ serves dinner Monday to Saturday and takes reservations. Book a few days ahead in high season, mention dietary requirements when you reserve and confirm current hours directly.
For the rest of the stay, you can compare accommodation through our travel partner. Our ShopMy travel collection offers optional packing ideas. These affiliate links may earn us a commission from qualifying bookings or purchases; they do not reserve a table. Return to the Michelin dining hub to explore other distinctions and destinations.
