Postre Chajá was created in the early twentieth century at Confitería Las Familias in Paysandú. Uruguay’s Ministry of Tourism describes the classic as a layered confection of meringue, sponge cake, cream and peach—a beloved regional landmark named for the chajá, a native bird whose airy plumage inspired the dessert’s character.
It is less a dense celebration cake than an architecture of contrasts: crisp meringue, soft sponge, cool cream and bright fruit. The result looks lavish but eats with a surprising lightness.
